How Lactose Free Milk Is Made If you avoid regular dairy products because of lactose intolerance, you can turn to lactose-free milk and other dairy products. Have you ever wondered what being lactose intolerant means or how the chemical is removed from milk? Lactose Intolerance Basics Lactose intolerance isnt an allergy to milk. What it means is that the body lacks insufficient amounts of the digestive enzyme, lactase, needed to break down lactose or milk sugar. So, if you suffer lactose intolerance and ingest regular milk, the lactose passes through your gastrointestinal tract unaltered. While your body cant digest the lactose, gut bacteria can utilize it, releasing lactic acid and gas as products of the reaction, which lead to bloating and uncomfortable cramping. Ways Lactose Is Removed from Milk There are a few different ways to remove lactose from milk. As youd guess, the more involved the process, the more the milk costs at the store. A common method is to simply add the enzyme lactase to milk, essentially pre-digesting the sugar into glucose and galactose. The resulting milk still contains the enzyme, so the milk is ultra-pasteurized to deactivate the enzyme and extend the shelf life of the milk.Another method is to pass milk over lactase that is bound to a carrier. Using this procedure, the milk still contains the sugars glucose and galactose, but not the enzyme.Membrane fractionation and other ultrafiltration techniques may be used to mechanically separate lactose from milk. These methods completely remove the sugar, better preserving the normal flavor of milk. Why Lactose-Free Milk Tastes Different If lactase is added to milk, the lactose breaks into glucose and galactose. There isnt more sugar in the milk than before, but it tastes a lot sweeter because taste receptors perceive glucose and galactose as sweeter than lactose. In addition to tasting sweeter, milk that is ultra-pasteurized tastes different because of the extra heat applied during its preparation. How To Make Lactose-Free Milk at Home Lactose-free milk costs a lot more than regular milk because of the additional steps required to make it. However, you can save most of the expense if you turn regular milk into lactose-free milk yourself. The easiest way to do this is to add lactase to the milk. Lactase drops are available at many stores or online from stores, such as Amazon. The amount of lactose removed from the milk depends on how much lactase you add and how long you give the enzyme to react (usually 24 hours for full activity). If you are less sensitive to the effects of lactose, you dont need to wait as long or you can save more money and add less lactase. Aside from saving money, one advantage to making your own lactose-free milk is that you wont get that cooked flavor of ultrapasteurized milk. Great Quotes From the Glass Menagerie The Glass Menagerie by Tennessee Williams is often called a memory play. We learn about a small American family, that would probably be considered rather normal or everyman family. The play is also popular because there are autobiographical elements. Scene 1 In memory everything seems to happen to music. Tom Wingfield is speaking as narrator. Theres an interesting quality that seems to associate itself without memories. It sometimes feels as though we are watching the events unfold before us (on a stage) or watching a replayed movie- of someone elses life- thats been set to music. It doesnt always seem real. And, even if we know that it happened, theres that feeling that were all pawns in some huge, but very artificial menagerie. Yes, I have tricks in my pocket, I have things up my sleeve. But I am the opposite of a stage magician. He gives you illusion that has the appearance of truth. I give you truth in the pleasant disguise of illusion. Here, in Scene 1, Tom Wingfield is speaking as narrator. Hes one of the characters in the action of this play, but hes also a twist on the concept of a magician. Scene 2 Mother, when youre disappointed, you get that awful suffering look on your face, like the picture of Jesus mother in the museum. Laura Wingfield is talking to her mother (Amanda). The interplay could be described as a rather-typical mother-daughter interchange. I know so well what becomes of unmarried women who arent prepared to occupy a position. Ive seen such pitiful cases in the South- barely tolerated spinsters living upon the grudging patronage of sisters husband or brothers wife!- stuck away in some little mousetrap of a room- encouraged by one in-law to visit another- little birdlike women without any nest- eating the crust of humility all their life! Is that the future that weve mapped out for ourselves? Amanda Wingfield has tied herself into the fortunes (and futures- good and bad) of her children, which explains some of her manipulative mentality toward them. Why youre not crippled, you just have a little defect- hardly noticeable, even! When people have some slight disadvantage like that, they cultivate other things to make up for it- develop charm- and vivacity- and- charm! Note: Amanda Wingfield is manipulating her daughter, Laura. Girls that arent cut out for business careers usually wind up married to some nice man. Amanda Wingfield has learned that her daughter, Laura, has dropped out of business school. Scene 3 I took that horrible novel back to the library- yes! That hideous book by that insane Mr. Lawrence. I cannot control the output of diseased minds or people who cater to them- BUT I WONT ALLOW SUCH FILTH BROUGHT INTO MY HOUSE! No, no, no, no, no! Amanda Every time you come in yelling that Goddamn Rise and Shine! Rise and Shine! I say to myself, How lucky dead people are! But I get up. I go! For sixty-five dollars a month I give up all that I dream of doing and being ever! And you say self- selfs all I ever think of. Why, listen, if self is what I though of, Mother, Id be where he is GONE! Tom Scene 4 I know your ambitions do not lie in the warehouse, that like everybody in the whole wide world- youve had to- make sacrifices, but- Tom- Tom- lifes not easy, it calls for- Spartan endurance! Amanda Man is by instinct a lover, a hunter, a fighter, and none of those instincts are given much play at the warehouse! Tom as he argues with his mother Amanda about his career This was the compensation for lives that passed like mine, without any change or adventure. Adventure and change were imminent in this year. They were waiting around the corner for all these kids. Tom Scene 5 You are the only young man that I know of who ignores the fact that the future becomes the present, the present becomes the past, and the past turns into everlasting regret if you dont plan for it! Amanda to Tom No girl can do worse than put herself at the mercy of a handsome appearance. The Glass Menagerie Amanda, referring to the bad choice she made in marrying a handsome man, Scene 5. She lives in a world of her own- a world of- little glass ornaments. Tom, about Laura. Scene 6 He was shooting with such velocity through his adolescence that you would logically expect him to arrive at nothing short of the White House by the time he was thirty. Toms impressions of Jim OConnor when they were both in high school All pretty girls are a trap, a pretty trap, and men expect them to be. This is a perfect representation of a modernist perspective on marriage and relationships. Amanda is trying to make her daughter, Laura, as attractive as possible. Its jaded and does not seem to have the idea of love as part of the equation. People go to the movies instead of moving! Hollywood characters are supposed to have all the adventures for everybody in America, while everybody in America sits in a dark room and watches them have them! Yes, until theres a war. Thats when adventure becomes available to the masses. Tom I know I seem dreamy, but inside- well, Im boiling! Whenever I pick up a shoe, I shudder a little thinking how short life is and what I am doing! Whatever that means, I know it doesnt mean shoes - except as something to wear on a travelers feet! Tom All of my gentlemen callers were sons of planters and so of course I assumed that I would be married to one and raise my family on a large piece of land with plenty of servants. But man proposes- and woman accepts the proposal! To vary that old, old saying a bit-I married no planter! I married a man who worked for the telephone company! This is an example of Amanda, and her brand of Southern-belle sentimentality and charm- high in volume and heavy on the flourish. Scene 7 People are not so dreadful when you get to know them. Jim is giving his sister words-of-wisdom (to help with shyness). You think of yourself as having the only problems, as being the only one who is disappointed. But just look around you and you will see lots of people as disappointed as you are. Jim to Laura I believe in the future of television! I wish to be ready to go up right along with it. Therefore Im planning to get in on the ground floor. In fact Ive already made the right connections and all that remains is for the industry itself to get under way! Full steam- Knowledge- Zzzzzp! Money- Zzzzzp!- Power! Thats the cycle democracy is built on. Jim Most of them are little animals made out of glass, the tiniest little animals in the world. Mother calls them a glass menagerie! Heres an example of one, if youd like to see it! ... Oh, be careful- if you breathe, it breaks! ... Hold him over the light, he loves the light! You see how the light shines through him? This is part of the interaction between Laura and Jim, who accidentally bumps the table (while they are dancing). The glass unicorn breaks. Glass breaks so easily. No matter how careful you are. Laura is talking to Jim, but its an ironic reference to Laura (and to her whole family). They are all fragile, and will break apart. I wish that you were my sister. Id teach you to have some confidence in yourself. The different people are not like other people, but being different is nothing to be ashamed of. Because other people are not such wonderful people. Theyre one hundred times one thousand. Youre one times one! They walk all over the earth. You just stay here. Theyre common as- weeds, but- you- well, youre- Blue Roses! Jim is talking to Laura Things have a way of turning out so badly. Amanda is being her ole pessimistic self, thinking the worst in every situation! You dont know things anywhere! You live in a dream; you manufacture illusions! Amanda is criticizing Tom yet again. In reality, he has a better, more firm, grasp of reality than she does. She exists in a glass menagerie of her own making, and wants to control every aspect of it. Thats right, now that youve had us make such fools of ourselves. The effort, the preparations, all the expense! The new floor lamp, the rug, the clothes for Laura! all for what? To entertain some other girls fiancà ©! Go to the movies, go! Dont think about us, a mother deserted, an unmarried sister whos crippled and has no job! Dont let anything interfere with your selfish pleasure I just go, go, go- to the movies! Amanda I didnt go to the moon, I went much further- for time is the longest distance between two places. Tom I left Saint Louis. I descended the steps of this fire escape for a last time and followed, from then on, in my fathers footsteps, attempting to find in motion what was lost in space. . . . I would have stopped, but I was pursued by something. . . . I pass the lighted window of a shop where perfume is sold. The window is filled with pieces of colored glass, tiny transparent bottles in delicate colors, like bits of a shattered rainbow. Then all at once my sister touches my shoulder. I turn around and look into her eyes. Oh, Laura, Laura, I tried to leave you behind me, but I am more faithful than I intended to be! I reach for a cigarette, I cross the street, I run into the movies or a bar, I buy a drink, I speak to the nearest stranger- anything that can blow your candles out!- for nowadays the world is lit by lightning! The given lectures do not only provide the required explanation for terms being the subjects of discussion; but more importantly, learning goals are identified and illustrations are provided to guide and enhance learning skills. For instance, the topic on transactions processing gave students the lay-outs for sales or re venue cycle, as well as other cycles such as the purchasing, payroll and fixed asset cycle. These lay-outs assisted students in understanding the theories through visual representation of elements and interactions among stakeholders: managers, different departments, and external institutions (suppliers, government, and customers). I realized, however, that there were some topics which are generally difficult to understand given the nature and level of complicated concepts that were presented. For example, the topic on IS auditing was a fairly difficult topic that aimed to provide concepts in the most concise form. It, however, was successful in providing a general overview of the audit techniques and steps from a studentââ¬â¢s perspective. Both critical and analytical skills are improved in this phase. I realized that for students who developed a deeper interest in the subject would need to make additional research or undertake additional courses on that topic alone. The topic on security and control is an interesting, relevant and contemporary issue that is highly important in terms of applicability to global organizational settings. Due to the technological developments accorded by the internet age, various organizations that opted to implement electronic applications (such as online banking, selling transactions through electronic business, and delivery of health care) need to be serious about awareness on this subject. My interpretative, analytic and application skills are enhanced as the subject of security breaches are closely studied. The topic on recovery procedures and control measures are most useful to inform me on the critical aspects of ensuring security in various phases of the operations in the organization, not only in information technology, but in other areas such as personnel, physical lay-out and structure, among others. It is my personal belief that other topics were fairly presented in a very generalized manner with the objective of pr oviding the necessary information that could be sourced from these: supply chain management, logistics and competitive advantage. These concepts should be discussed in more detail in other management courses like marketing. Problems Associated With Low-carbohydrate/High-protein Diets A diet that is low in carbohydrates and high in proteins is not a healthy weight loss method. This type of diet, such as the Atkins Diet, recommends eating foods that are high in fat and protein. However, there are no restrictions on the kinds of fat and protein that may be consumed; and there are no restrictions on caloric intake. This poses a problem because there are health risks associated with high amounts of fat and protein in the diet. There are also health risks associated with carbohydrate deficiency. Our bodies need carbohydrates in order for our brains and central nervous systems to function properly. Carbohydrate deficiency also leads to losses of functional protein tissue in the muscles. Thus, low-carbohydrate/ high-protein diets are not a healthy approach to weight loss. Low-carbohydrate/ high protein diets, such as the Atkins Diet, encourage dieters to consume foods that are proven to cause health problems, especially heart disease. These diets replace carbohydrates with high-fat and high-protein foods such as meats, eggs, cheese, and butter. The problem with this recommendation is that there are no restrictions on the amount or the type of fat contained in these foods; and this flaw in the diet can lead to a higher risk of heart disease. Low-carbohydrate/ high-protein diets neglect some important risk factors for heart disease. One of these factors is total dietary fat intake. The Atkins Diet, for example, does not restrict the amount of calories that comes from fats. Another risk factor is the type of fat, saturated or unsaturated. Saturated fats such as butter, lard, margarine, meats, and dairy products should only constitu... ...ts that our bodies need in order to function properly. Our brains need the fuel that carbohydrates provide for us; and the energy that comes from protein is not a sufficient source to replenish the rest of our bodies. Thus, including more protein-rich foods as part of our diet does not compensate for this loss of energy. Eating excessive amounts of protein affects our health in a negative way. The saturated fat and cholesterol in these foods that are recommended by low-carbohydrate/ high-protein diets actually promote an increased risk of heart disease. A weight loss plan that leads to such adverse effects on the body is definitely not a dieterââ¬â¢s healthiest option. Before adhering to a diet plan, one must weigh the pros and cons of its effects. It is easy to see that in the case of low-carbohydrate/ high-protein diets, the negatives outweigh the positive.

The organizationââ¬â¢s core values are intensely held and widely shared by the whole organization, meaning that all employees believe in and stick to the organizational culture which makes sense why itââ¬â¢s regarded as having a strong culture. Which is reflected through their performance, loyalty and commitment, even when others competitors rose in the market, employees still never left the organization although they demanded better pay. Other reasons might be: Selection: workers were selected on the basis of having a sense of humour and other qualities but sense of humour has been a basic criterion. Top management: always motivated employees by portraying the airline as the underdog. Also allowing a large portion of the compensation to be in the form of stocks ,therefore sharing profits. Finally the provision of job security. Socialization: as mentioned in the case study that the company encouraged itââ¬â¢s employees too work hard and at the same time have a good time. Question two: Do you think upstart airlines can successfully duplicate this culture? It might be able to duplicate part of the culture but not all of it, since they already penetrated the market with their competitive edges as offering reserved seats, free live-satellite TV, more fuel-efficient planes and younger lower paid workers. Which makes sense why they can hardly see themselves as the underdogs, since they are likely to win being the top dogs of the market. Question three: Now that the company is no longer the underdog what can Southwestââ¬â¢s anagement do to retain itââ¬â¢s high-productivity culture? The organization should motivate employees to work as hard as they were before. The case now is that part of their compensation is cut due to the decrease of their sharesââ¬â¢ value and dividends. Which justifies their aggressive demand for having higher wages and less working hours. Southwest should try to enhance itââ¬â¢s service and attract new customers through th e provision of in-flight entertainment, purchasing new jets and other benefits that would make them competitive in the market place. At that, time employees would be able to work harder. Question four: What dose the case imply about sustaining culture in a changing environment? Any organization should constantly evaluate the market for new technological developments and customerââ¬â¢s needs, because changing organizational culture is the hard way. As it involves changing peopleââ¬â¢s behavior; how they think, how they act and interact with one another in order to achieve the organizationââ¬â¢s objectives.
